Honey-Glazed Salmon with Broiled Asparagus
 
 
Makes 2 servings
Ingredients
Brown butter sauce:
  • 2 tablespoons unsalted butter
  • 1 garlic clove, minced
  • 1½ teaspoons honey
  • juice of ½ lemon
  • sea salt and freshly ground black pepper, to taste
Salmon:
  • 2 skin-on salmon fillets (4-6 ounces each)
  • sea salt and freshly ground black pepper, to taste
  • 2 tablespoons all-purpose flour
  • 2 tablespoons honey
  • 1 tablespoon olive oil
Broiled asparagus:
  • 1 pound asparagus
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • sea salt and freshly ground black pepper, to taste
  • ½ lemon, zest and juice
  • 2 tablespoons grated cheese
Instructions
Make the brown butter sauce:
  1. In a small sauce pan, melt butter over medium heat. Continue to cook, swirling pan occasionally, until deep golden brown. Immediately pour butter into a small bowl and add garlic, honey and lemon juice; whisk until smooth. Season with salt and pepper to taste.
Make the salmon:
  1. Preheat oven to 400 degrees.
  2. Sprinkle both sides of fish with salt and pepper. Dredge fillets in flour and drizzle with honey.
  3. In a large fry pan, heat olive oil over high heat. Add fish, skin side down, and cook for 2 minutes. Flip and cook for another 2 minutes.
  4. Place fish, skin side down, on a baking sheet lined with foil. Bake for 8-10 minutes or until fish flakes easily with a fork.
  5. Drizzle brown butter sauce over fish.
Make the broiled asparagus:
  1. Preheat broiler. Place asparagus on a baking sheet and drizzle with olive oil. Season with garlic powder, salt and pepper; toss to coat.
  2. Broil for 5 minutes, stirring halfway through. Remove from the oven and top with lemon zest and juice, and cheese.
