Roasted Teeny Tiny Potatoes
 
 
Makes 2-3 servings
Ingredients
  • 1 pound teeny tiny potatoes, halved lengthwise
  • 2 garlic cloves, minced
  • 1 tablespoon olive oil
  • 1 teaspoon sea salt
  • ½ teaspoon freshly ground black pepper
  • 2 tablespoons chopped fresh parsley
  • 3 tablespoons grated Asiago cheese
Instructions
  1. Preheat oven to 450 degrees. Place potatoes and garlic on a baking sheet. Drizzle with olive oil, season with salt and pepper, and toss to coat.
  2. Bake for 15 minutes, remove from the oven and stir gently. Bake for an additional 10 minutes or until potatoes are caramelized and fork tender.
  3. Remove from the oven and add parsley and Asiago cheese; toss to coat.
