Instructions
Preheat oven to 400 degrees.
Trim stems of artichokes and pull off tough outer leaves. Cut ½ inch off the top of each artichoke. Quarter or halve artichokes, depending on their size.
Place artichokes on a baking sheet. Drizzle with olive oil and add lemon zest and lemon juice, shallot, thyme, and chili flakes. Season generously with salt and pepper; toss to coat.
Bake artichokes until tender, 20-25 minutes, stirring halfway through.
Remove from the oven and season with additional salt.
