In a large bowl, heat water until warm - about 20 seconds in the microwave should do. Add the yeast and whisk until combined. Let sit until foamy, about 10 minutes.
In a medium bowl, combine the flour, cornmeal, sugar and salt.
Add the milk and eggs to the yeast mixture and whisk until combined.
Add the dry mixture to the wet mixture and whisk until combined. Add the butter and whisk until combined. Cover the bowl with plastic wrap and transfer it to the refrigerator to chill for at least 4 hours or overnight.
When you're ready to make the waffles, remove the batter from the refrigerator and add the baking soda; whisk until combined.
Preheat and grease a waffle iron. Follow the directions on your waffle iron to cook the waffles. Serve immediately, or set aside to cool and freeze for later.
