Matcha Mochi Waffles
 
 
Makes 2 7" round waffles
Ingredients
  • 1½ cups + 2 tablespoons sweet rice flour, divided
  • ¾ cup whole milk, divided
  • 3 tablespoons unsalted butter, melted
  • ½ teaspoon vanilla extract
  • 1 egg
  • ½ cup sugar
  • 2 tablespoons matcha powder
  • 1½ teaspoons baking powder
  • ¼ teaspoon salt
Instructions
  1. In a small bowl, whisk together ¼ cup sweet rice flour and ¼ cup milk. Microwave for 1 minute, stirring every 20 seconds. Transfer mixture to the bowl of a stand mixer and let cool for 3 minutes. At this point, the batter will be very sticky.
  2. Add the remaining ½ cup milk, butter, vanilla extract and egg and beat on low speed until combined.
  3. In a separate bowl, combine the remaining 1¼ cups + 2 tablespoons sweet rice flour, sugar, matcha powder, baking powder and salt; mix well. Add the dry mixture to the wet mixture and beat on low speed until combined. Increase speed to medium and beat until smooth and elastic. Divide batter in half.
  4. Preheat and grease a waffle iron. Follow the directions on your waffle iron to cook the waffles. They will crisp up as they cool.
