Home Fries with Bacon, Bell Peppers and Onions
 
 
Makes 4 servings
Ingredients
  • 2 strips bacon, cut into lardons
  • 1 tablespoon olive oil
  • 5-6 medium Yukon Gold potatoes, peeled and cut into ½" cubes
  • 1 red bell pepper, diced
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 2 teaspoons chopped fresh parsley
  • sea salt and freshly ground black pepper, to taste
  • ¼ cup grated Pecorino Romano cheese
Instructions
  1. In a large fry pan, cook bacon on medium heat until fat renders and bacon crisps, 6-8 minutes. Remove bacon from pan and set aside on paper towels to drain.
  2. Remove all but 2 tablespoons of fat from pan. Add olive oil to pan and heat over medium heat. Add potatoes and toss to coat. Spread potatoes in a single layer, cover and cook, without stirring, until they start to brown on the bottom, about 8 minutes.
  3. Uncover, add bell pepper and onion, and stir to combine. Cook, stirring occasionally, until potatoes are golden brown on all sides, about 10 minutes.
  4. Add garlic and parsley and cook for 2 minutes. Season with salt and pepper to taste.
  5. Top with cooked bacon and Pecorino Romano cheese and serve immediately.
